There are two main types of fats, saturated and unsaturated. Saturated fats have been touted as the “bad” fats. Unsaturated fats have been touted as the “good” fats.  Contrary to popular belief, saturated fats have some of the same benefits as unsaturated fats. Both types of fat are good and both are needed. There is a movement among some people to minimize the consumption of fatty acids and their presence in the food supply.

However, the only fatty acids that may be of concern are those that are generated during hydrogenation (known as trans fats) of vegetable oils to create desirable functional properties for use in margarine’s, baked goods and many other “processed” foods. There is a difference in the health effects of fatty acids obtained by industrial processing of vegetable oil and those fatty acids that “naturally” occur in animal fat found in milk and meat. It may be better to categorize these fats as follows: the bad fats being the damaged or processed fats and the good fats being the undamaged or unprocessed fats. Man-made food (or processed) cannot ever be as good as nature-made whole (unprocessed) foods. However, a healthy person can metabolize any kind of fat just fine!

FACTS and BENEFITS of Saturated Fats & Animal Protein.

1. SATURATED FAT / CHOLESTEROL is a major component of and is contained in almost every cell membrane in the body; it is essential for our well-being. Healthy cells are the body’s defense system, which protect us from harmful bacteria, viruses and other toxins. Saturated fat preserves the integrity of our (healthy) cell walls by destroying harmful microorganisms. Therefore, saturated fat is also important for prevention of cancer and other chronic diseases, since most diseases have underlying systemic infections.

2. Brain matter is more than 80% cholesterol. Saturated fats are commonly viewed as harmful for the heart, yet saturated fat is the heart’s preferred fuel. The heart muscle is surrounded by saturated fat; it serves as a “protective barrier” and it is drawn upon during times of stress! Fat is also needed for the formation of the myelin sheath, a membrane that protects the nerves, and is essential to the normal function of the central nervous system and brain. Therefore, fat is also important for preventing brain, nerve, and heart disease.

3. There are many cultures that eat moderate to high amounts of saturated fat and are known for their longevity and good health. The Eskimos mainly eat meat and lard, yet they have low rates of heart disease.  The people of Okinawa are well known for their good health to the extent that books have been written about their diet. Their main cooking oil is pork lard.

4. Collagen only comes from animal sources. Collagen is a protein abundant in the human body; it’s the “glue” that holds our bodies together. Without collagen we would not be able to stand or walk.  We would simply fall apart. Thus, collagen supports the health of our bones, muscles, ligaments, tendons, skin, hair, eyes, teeth and joints.

5. The best source for B12 and iron comes from red meat.

So do not be discouraged by all the bad press or feel guilty about eating saturated fat…

 How to prevent & reverse cholesterol problems

Reverse Nutritional allergies. Almost everyone knows about food allergies, but not everyone is aware of nutritional allergies, and how to reverse them. But, nutritional allergies are a big contributing factor to nearly every chronic disease. Nutritional allergies are also a big reason why many people have difficulty in digesting (metabolizing) animal fat and other foods.

There are two main causes to ALL chronic disease: deficiencies and toxicities.

Food allergies cause poor digestion, which in turn causes poor absorption; thus causing nutritional deficiencies and toxicities in the body. Deficiencies and toxicity cause the organs to become congested and run less efficiently. Cholesterol problems are not caused from the mere consumption of fats, they are mostly due to nutritional deficiencies, and a congested toxic liver and/or gallbladder. The liver produces bile, which is stored in the gall bladder. Bile is responsible for the digestion and absorption of fats. When working properly (when not allergic), your body was designed, to metabolize fat and cholesterol.

Reversing nutritional allergies (mainly B vitamins, Vitamin E, Vitamin C, & fats) reverses cholesterol problems from the level of causation by: 1. Reducing the amount of accumulated metabolic waste (toxins) in the organs so they can function properly and, 2. Halting deficiencies so nutritional levels can be restored to optimal levels. 3. Restoring the proper assimilation of nutrients that emulsify fat and keep cholesterol in check!

Do a liver and gall bladder cleanse.  There are many herbal remedies for cleansing the liver and gall bladder to help restore its natural function. Seek them at your health food store. However, once nutritional allergies are reversed, cleansing becomes less necessary, because your body will be metabolizing fat better.

One of my healing clients had a lump on her eyelid near a point on the gallbladder meridian. I assumed it was a fatty lump, and she confirmed that she was not digesting fat very well. So we immediately did a few healing’s on reversing her allergy to fat, and the lump disappeared ! You see, after the healing’s she is now metabolizing fat much better, so it’s not accumulating in her body anymore. Yay.

Balance your diet and take helpful supplements. Balancing your diet means to eat from all the food groups and to eat a variety of food, which helps to ensure a variety of nutrients that help emulsify fat, such as lecithin, vitamin E, B vitamins and other nutrients that keep the cholesterol in balance. Choline and inositol are both B vitamins and are high in lecithin. A healthy body naturally produces lecithin, as it is a component of bile. Lecithin and cholesterol are naturally found together, in foods like nuts, eggs, milk and liver; a great example of how nature provides exactly what we need; in this case nature is providing the very nutrients that keep cholesterol in check. In theory, nobody should have cholesterol problems. Fat is not the problem, it’s the allergy condition that’s the problem, and the fact that most people don’t know how to solve it.

Yet, cholesterol medication is one of the most prescribed, BUT UNnecessary medications of all. Cholesterol problems are NOT the result of a deficiency in medication, it is the the result of the nutrients (that naturally emulsify fat) NOT working properly because of the allergy condition. Many people think they don’t have nutritional allergies because they do not experience the “typical” allergy symptoms. But ANY symptom including cholesterol problems can/are the result of…lets just say poor assimilation of nutrients. Call it what ever you like.

After reversing nutritional allergies, some people may need to supplement with the aforementioned nutrients for a while. Others may need to do a liver and gallbladder flush to help restore its proper function, and this alone will bring short term results. Because protein is the second (to water) most abundant nutrient in the body, protein intake should be high, whether you choose to eat animal protein or not. Saturated fats consist of short and medium chain fatty acids such as lauric and caprylic acid. They are also found in coconut oil, palm oil, butter, cow and goat milk, and human breast milk.

If you choose not to eat meat, it would be healthful to include the above sources of saturated fat. When eating meat, you just need to balance your meal with lots of veggies to make your meal pH balanced. 65-80% veggies and 20-35% organic meat make a perfect nutritional meal. Fiber also helps to stabilize cholesterol. We obtain fiber from seeds, beans, fruit, vegetables and WHOLE grains. You can also add extra fiber with supplements such as Glucomannon and psyllium. I take 1-2 capsules with almost every meal. These polysaccharide fibers help stabilize cholesterol, as well as blood sugar, and blood pressure.

Exercise benefits our entire system, but it is particularly important in reducing the risk of coronary artery disease by lowering cholesterol levels, strengthening the heart muscle, maintaining elasticity of the arteries and balancing blood pressure. It also helps to regulate metabolism, burn fat, tone the respiratory system, and neutralize stress.

Diatomaceous Earth (food grade) is organic and made of finely milled fossil shells, created by tiny one-celled plant organisms called diatoms. Diatoms are a major group of algae, a type of phytoplankton. It contains silica, which promotes mineral absorption. From using Diatomaceous Earth, people have experienced lower blood pressure, lower cholesterol, and stronger bones and teeth. The minerals support the entire body system. But a good diet should ALWAYS come first, once all food allergies are resolved.
